Healthy Summer Treats

Who doesn’t love an ice-cold freezer treat on a hot day?  Unfortunately, a lot of store-bought freezer treats are full of sugar, artificial ingredients and preservatives, which don’t fit in well the whole food lifestyle that us Naturopathic Doctors here at True Potential like to promote. But have no fear – you can have your treat and eat it too!!

There are lots of healthy, easy, homemade alternatives that you and the kids in your life can enjoy and actually get a nutritional benefit from.

Here is one of my favorite recipes, from one of my favorite whole foods blogs, www.nourishingmeals.com.  These guys know how to make a summer treat healthy, tasty, and nutritious all at the same time.  Give this recipe a try, either as frozen fudgesicle treats, or even just as chocolate avocado pudding if you just can’t wait for them to freeze!

Avocado Fudgesicles

8 medjool dates, pitted

½ cup water

3 medium avocados, pitted

1 cup coconut milk

¼  cup honey

5 to 7 tablespoons cacao or cocoa powder

2 teaspoons vanilla

Pinch sea salt

Place the dates into your blender or vita-mix and cover with the 1/2 cup water. Pack the dates down if needed so they are covered, for the most part, in the water. Let soak for about 30 minutes.

Then add in the remaining ingredients and blend until very smooth and creamy. Depending on your blender, you may need to add a little extra coconut milk or water.

Pour into small bowls and serve as pudding or pour into popsicle molds and freeze for at least 6 hours. Run under hot water to release.
