As a naturopathic doctor with 2 little boys, I am often asked the question “what do you feed your kids for breakfast?”.   Well, below is one of the boys favourite breakfasts – pumpkin pancakes! And at this time of year you can even use real pumpkin.

The protein of the eggs and coconut flour helps hold them until snacktime.  Sometimes we have pumpkin pancakes for snacktime too!  Enjoy!

 

 


Pumpkin Pancakes

3 eggs

4 tbsp coconut flour

1 tsp vanilla

½ tsp baking soda

½ cup pumpkin

½ tsp each cinnamon, nutmeg, ginger and ¼ tsp allspice

Maple syrup or stevia to sweeten

Coconut milk or almond milk or rice milk to make desired consistency

Tips

  • You will need to cook on them on low heat so they don’t burn. 
  • They will take longer to cook than regular pancakes. 
  • Make the pancakes small, so they are easier to flip.
