This delicious Mediterranean chicken recipe will make you feel like you’ve taken a spontaneous  trip to the Mediterranean. And that’s not even the best part…

It’s so quick and easy – requiring minimal ingredients and time commitment – you’ll want to make it again and again!

So go ahead and whip up this wonderfully healthy dinner option tonight!

Ingredients

  • 2 lbs. chicken breast (approximately 4 breasts)
  • 1 jar of sundried tomatoes, soaked in oil (tomatoes soaked in olive oil are preferable)
  • 4-6 cloves of garlic
  • basil
  • oregano
  • salt
  • pepper

Directions

  1. Slice chicken breasts crosswise into strips and place in a large glass baking dish.
  2. Sprinkle with a generous amount of basil, oregano, salt, and pepper.
  3. Toss to coat and spread pieces evenly along bottom of baking dish.
  4. Remove sun-dried tomatoes from oil and roughly chop.
  5. Sprinkle chopped tomatoes on top of chicken.
  6. Crush garlic and add to oil in tomato jar.
  7. Put lid on jar and shake well to disperse the garlic, then drizzle the oil and garlic over the chicken.
  8. Bake for 20 to 30 minutes, or until chicken is tender and cooked through.
  9. Remove chicken from dish, leaving behind the tomato pieces, garlic, and oil/cooking liquid.
  10. Pour the liquid, garlic, and tomatoes into a vitamix, blender or food processor, and blend until a smooth and creamy consistency is reached.
  11. Add extra olive oil if necessary.
  12. Taste sauce and add salt and/or pepper, basil, oregano if needed.
  13. Return chicken to baking dish and pour sauce over chicken.
  14. Serve with sauteed veggies or veggie stir fry.
